Jose B. Morante had been in the grains business for about a decade
when he heard of training programs offered by the DOST. The vinegar acetator specially struck his attention, considering that fruit
production, coconut water and other coconut by-products could
rake in cash. He sought assistance from the DOST for his choice
technology.
DOST eventually endorsed him to the Food Processing Division
of ITDI experts for the appropriate technology transfer and training.

Product Description
JBM’s major product is naturally fermented vinegar. It is produced
from coconut water and comes in 320 and 750 mL glass bottles. Soon the company will introduce vinegar in 200 mL pouches (Stand-
Up-Pouch).
